Perfect Peach Cheesecake Treat

Ingredients

  • 4 Fresh Whole Peaches

  • ½  Lemon, juiced
  • 4 Tbs. (½ stick) Unsalted Butter
  • ¼ cup Light Brown Sugar, firmly packed
  • 2 Slices The Cheesecake Factory Original Cheesecake, deeply chilled
  • As needed - Fresh Raspberries
  • As needed - Mint Sprig 

Directions

1.    Cut the Peaches in half and remove the pits.  Cut the Peach halves into ½ inch thick slices.

2.    In a nonreactive bowl, toss together the Peach slices and Lemon Juice.  Set aside.

3.    In a medium fry pan over medium heat, melt the Butter.  Add the Sugars and stir.  Add the Peaches and sauté until the Peaches are lightly browned and the Sugar has caramelized (about 5 minutes).  Remove from the heat.

4.    Using a 4 oz. scoop, scoop the Cheesecake and place one scoop into the bottom of a martini glass.

5.    Top the scoop of Cheesecake with a few warm peaches.

6.    Garnish with Raspberries and Mint Sprig.  Serve immediately.

7.    Enjoy!
