Chocolate Chip Pecan Cookie Cheesecake Sandwich


Chocolate Chip Pecan Cookie:

  • 1 cup Butter, softened
  • 1 cup Brown Sugar
  • ½ cup Granulated Sugar
  • 2 large Whole Eggs
  • 1 tsp Vanilla                                    
  • 2 cups All Purpose Flour
  • 1 tsp Baking Soda
  • ½ tsp Salt
  • 2 cups Toasted Pecans, Chopped
  • 2 cups Semi-sweet Chocolate Chips

Chocolate Chip Pecan Cookie Cheesecake Sandwich Ingredients:

  • Chocolate Chip Cookies with Pecans, cooled (see recipe above)
  • Deeply Chilled Slices of Cheesecake
  • Assorted Toppings (Mini Chocolate Chips, Chopped Toasted Pecans or your favorite Nut, Rainbow Sprinkles, Mini M&M’s, etc.) 


  1. Pre-heat oven to 350’ F.
  2. Mix room temperature Butter until smooth and creamy.
  3. Stir in both Sugars and mix 1-2 min until light and creamy.
  4. Add Eggs and Vanilla and mix well.
  5. Mix in Flour, Baking Soda, and Salt.
  6. Add chopped Pecans and Chocolate Chips.
  7. Use a scoop to form 1.5 oz balls; place on a baking sheet lined with parchment paper; gently press each ball to flatten slightly.
  8. Refrigerate balls for approximately 10 minutes before baking.
  9. Bake @ 350’ F for 12 – 14 min.
  10. Place cookies on cooling rack and allow to cool to room temperature.
  11. Place your favorite Cheesecake in a small mixing bowl. Gently mix all components together with a rubber spatula.
  12. Scoop approximately 4 oz. of Cheesecake on top of one Cookie. Place another Cookie on top.
  13. Gently press together to form a sandwich.
  14. Roll edges of cheesecake sandwich in your favorite toppings.
  15. Enjoy right away or wrap each sandwich in plastic wrap to enjoy later.
