Chocolate Chip Pecan Cookie Cheesecake Sandwich
Ingredients
Chocolate Chip Pecan Cookie:
- 1 cup Butter, softened
- 1 cup Brown Sugar
- ½ cup Granulated Sugar
- 2 large Whole Eggs
- 1 tsp Vanilla
- 2 cups All Purpose Flour
- 1 tsp Baking Soda
- ½ tsp Salt
- 2 cups Toasted Pecans, Chopped
- 2 cups Semi-sweet Chocolate Chips
Chocolate Chip Pecan Cookie Cheesecake Sandwich Ingredients:
- Chocolate Chip Cookies with Pecans, cooled (see recipe above)
- Deeply Chilled Slices of Cheesecake
- Assorted Toppings (Mini Chocolate Chips, Chopped Toasted Pecans or your favorite Nut, Rainbow Sprinkles, Mini M&M’s, etc.)
Directions
- Pre-heat oven to 350’ F.
- Mix room temperature Butter until smooth and creamy.
- Stir in both Sugars and mix 1-2 min until light and creamy.
- Add Eggs and Vanilla and mix well.
- Mix in Flour, Baking Soda, and Salt.
- Add chopped Pecans and Chocolate Chips.
- Use a scoop to form 1.5 oz balls; place on a baking sheet lined with parchment paper; gently press each ball to flatten slightly.
- Refrigerate balls for approximately 10 minutes before baking.
- Bake @ 350’ F for 12 – 14 min.
- Place cookies on cooling rack and allow to cool to room temperature.
- Place your favorite Cheesecake in a small mixing bowl. Gently mix all components together with a rubber spatula.
- Scoop approximately 4 oz. of Cheesecake on top of one Cookie. Place another Cookie on top.
- Gently press together to form a sandwich.
- Roll edges of cheesecake sandwich in your favorite toppings.
- Enjoy right away or wrap each sandwich in plastic wrap to enjoy later.
