Frozen Cheesecake on a Stick Dipped in Chocolate

Directions
Begin with your favorite cheesecake. Remove any loose decorations or whip cream rosettes. While cheesecake is still frozen, insert a Popsicle stick in the center of the heel of each slice. Keep frozen until ready to dip.

Bring your Chocolate Shell mixture (recipe to follow) to its working temp (100’F – 105’F) slowly. Do this by heating the mixture in a double boiler or in your microwave on a medium setting. Be sure to stir the mixture slowly and not to incorporate air by using a whisk.

Next, place your garnish on a tray or plate. Be sure you have enough room to roll your slices with ease. The Chocolate Shell mixture will harden quickly so be sure you have enough garnish as well.

Remove a few slices of prepared cheesecake from the freezer and set along side your Chocolate Shell mixture. Completely submerge slice in the Chocolate Shell mixture. Be sure to cover the entire slice keeping a clean Popsicle stick for a handle. Once the slice has been dipped, hold it over the mixture to let most of the excess drip off. Immediately roll the slice in garnish and set on a sheet pan.

Once the slice has been dipped and garnished return it to the freezer to set. After setting, each slice can be wrapped in a Cellophane bag or plastic wrap for up to one week in the freezer.

Chocolate Shell Mixture
1 ¼ c Semi Sweet Chocolate Chips
4 T Unsalted Butter

Melt the chocolate with 2 T butter in Microwave. Heat on Medium 30 seconds at a time stirring occasionally until butter and chocolate are completely melted. Once mixture is lump free add the remaining 2 T butter and stir until melted. Mixture can be stored under refrigeration for up to one week in an air tight container. When ready to use, reheat in Microwave on Medium, stirring occasionally to working temperature 100’F – 105’F
